This sour was inspired by the idea that sake—especially nigori or doburoku—might pair surprisingly well with carbonated water.

For this drink, we use Nigori from Niida Honke Brewery, a sake producer known for growing 100% of their rice organically in their own fields. Their entire brewing process is done without any added yeast.

We blend two additional types of sake with the nigori to create a layered flavor profile. This combination gives the drink a pleasant, lingering umami finish along with a crisp, refreshing acidity that suits the sour style. The blend is something we take pride in—it's not exactly a secret, but we’ll leave the details out for now.

Because the cloudy particles tend to settle, the can is usually stored upside down. Before drinking, we recommend gently inverting it a few times to mix the contents evenly.

And one important note: keep it refrigerated. As soon as you get home, make sure to pop it into the fridge.
