中に含まれる「すえだれ」、末垂れと書きます。ウイスキーでいうとテイル（しっぽ）ともいいます。つまり、蒸留時の後半部分です。後半部分はどうなるかというと、アルコールみたいに沸点が低いものに加えて、沸点の高い油脂だったり、お酒のもろみにある色んな成分が蒸留されています。なので、ある意味でお酒臭さや個性とも言えるんですが、いわば少し油臭かったり、焦げたようなニュアンスがあったりと基本的には良しとされない部分です。その成分がいわゆるネガティブに言われうる焼酎の臭さだったり、そこの油脂が酸化してさらに臭さを生む原因にもなるので、完成品には混ぜずに廃棄する蔵元もおります。

ということで、この廃棄される末垂れは、かなり形態は違いますが、いわば日本酒でいうところの酒粕。今まで、有効活用されていなかったのですが、というか、それもそのはずで嗅げば、かなりの油臭さがあるんです。が、こちらをレモンの皮だったり柑橘をつけると（この柑橘も別の仕込みからの再利用！）、少し味が和らいで缶チューハイとして使えるようになりました。という画期的なことが最近になって分かりました。

そんな改良した末垂れをベースに使ったのが、こちらのイージーレモンサワー缶です。図らずも、とってもSDGsなものをつくってしまいました。是非ご賞味あれ。

味わいはもちろんもらってくる末垂れによって味も違いますし、正規の商品と違って、その味わいはコントロールされていないので、仕上がりの味も幅がありますが、そんなことも含めて体験として楽しんでもらえますと。アルコールは飲みやすい3％にしております。

Easy Lemon Sour 

“Sue-dare” (末垂れ) literally means “tail,” and in the world of whisky, it’s known as the “tail cut” — the latter part of the distillation process.

In this final stage, not only low-boiling components like alcohol are distilled, but also heavier compounds such as fats, oils, and other complex elements from the mash. These parts are often considered undesirable, as they can carry a slightly oily or burnt aroma — characteristics that are usually avoided in the final product. In fact, some distilleries discard this portion entirely to prevent off-flavors from developing, particularly those linked to oxidized fats and that infamous “shochu smell.”

(Sometimes, these tails are reused in the next mash, but practices vary by brewery.)

In a way, this “sue-dare” is to shochu what sake kasu (sake lees) is to sake — a byproduct often overlooked. And it’s not hard to see why: its raw form has a distinctly heavy, oily scent.

But recently, we discovered something exciting — by infusing it with lemon peels or other citrus (also reused from another brewing process!), the harsh flavors mellow out, making it surprisingly well-suited for chu-hi. It’s a small breakthrough that has turned a previously discarded byproduct into a delicious canned sour.

And that’s how this Easy Lemon Sour Can was born. Without even trying, we ended up creating something wonderfully aligned with SDGs principles.

Since the flavor depends on the particular batch of sue-dare we use — and unlike standard products, it isn’t tightly controlled — each can may taste slightly different. But that unpredictability is part of the charm.
