リアルレモンサワーをベースに1年に100本ほどだけ限定的に造るのがこちらの「すごい」レモンサワー。

海外の薬草酒でボタニカルをそのまま瓶に入れたようものが、見た目も秀逸なのですが、時間が経つにつれて漬け込んだ素材の味わいが強くなることによって、お酒の味わいが変わるのが他にはない面白さだなと思い、つくりました。
こちらは、皮を桂むきにして、そのまま瓶に入れただけなのですが、その分、レモンが漬け込み続けて、味わいは熟成した薬草酒のような味わいです。レモンの香りよりかは薬のような香りが強くなり、グレープフルーツやミントのような苦味や香りがふんだんに感じられます。

桂剥きといっても1日の仕込みで100本くらいしかできないので、限定的な生産です。お酒も一番味が強い春にしか造りません。
蓋というか抑えているのはラベルと同じ名尾和紙を、なんと更に奄美で泥染したものです。紐も大島紬のものです。

Sugoi Lemon Sour

This “Sugoi”（to mean amazing） Lemon Sour is a limited edition, made in quantities of only about 100 bottles a year, based on our Real Lemon Sour.

Inspired by herbal liqueurs from overseas, where botanicals are placed directly into the bottle, this creation is visually striking. What makes it truly unique is how the flavor evolves over time—the ingredients continue to steep, deepening the taste in a way that’s unlike any other drink.

For this version, lemon peels are thinly sliced using the katsuramuki technique and placed directly into the bottle. As they continue to infuse, the flavor develops into something reminiscent of aged herbal liqueur. Rather than a fresh lemon scent, the aroma becomes more medicinal, with pronounced notes of grapefruit and mint-like bitterness and fragrance.

Due to the meticulous katsuramuki preparation, only about 100 bottles can be produced in a single day, making this a truly limited production. It’s only crafted during spring, when the flavor of the sake base is at its peak.

The lid—more accurately, the material that holds it down—is made from Nao washi paper, the same as the label, but further dyed using traditional mud-dyeing techniques from Amami. The string is made from authentic Oshima Tsumugi silk.
